Ben’s Winter Broccoli Salad

This is my son’s recipe. He prepared it for me for a girls' lunch just recently and it was hugely appreciated by all present.

Serves 4

  • Medium Head of Broccoli
  • 180g Strong Cheddar Cheese
  • 8 Rashers Streaky Bacon
  • 4 Spring Onions
  • 200g Hellmans Mayonnaise
  • 6tsp Caster Sugar
  • 6tsp Balsamic Vinegar
  • Freshly Ground Black Pepper and Salt

Grill the bacon until really crisp and then chop into small pieces. Grate the cheese and chop the spring onions. Cut the raw broccoli into the smallest possible florets. Combine all of these ingredients in a large bowl.

To make the dressing mix together the mayonnaise, sugar and balsamic vinegar along with some seasoning. Add the dressing to the other ingredients and mix well. If you don’t mind getting mucky the best way to do this is with clean bare hands.

The salad should be extremely well coated in the dressing. If it's looking a little dry just add a spoonful or two more of mayonnaise.

Serve with hot crispy ciabatta.
