Grilled Chicken with Basil

This is a very quick, easy and delicious dish suitable for weekday supper but yummy enough for a dinner party. If you hate the thought of anchovies - don't - you do not taste them at all in the final product but they do give the sauce a fantastic flavour.
Ingredients
4 Chicken Breasts preferably with skin on
100g fresh basil leaves
6 anchovy fillets
60ml red wine vinegar
4tsp Dijon mustard
175ml olive oil
Reserve a few basil leaves for garnish.
Place the remainder basil leaves,
anchovy fillets, vinegar and mustard into a food processor and blitz for
several seconds. The leaves should be roughly chopped but not pureed.
Add the olive oil to the mixture with the motor on its slowest setting.
Coat the chicken breasts with some of the mixture and pour the rest into a sauce boat.
Set the grill to its highest setting and grill the chicken breasts for approximately 7 minutes each side, testing the thickest part of the breast to make sure it is cooked through properly.
Serve the chicken breasts with the pan juices poured over the top and with the accompanying sauce.
