Herby Baked Fish

Prep time - 15 mins
Cooking time - 1 hr, 10 mins
Delicious and so easy to prepare.
Ingredients
- 1kg Waxy Potatoes
- 1 Large Onion
- 4 x 150g Red Mullet Fillets or Sea Bream Fillets
- 1 tbsp Good Quality Mixed Dried Herbs
- Olive Oil
- Juice of Half a Lemon
- Freshly Ground Salt and Black Pepper
Preheat the oven to 200C (400F, Gas Mark 6).
Wash and finely slice the potatoes. Peel and finely slice the onion and scatter over the base of a roasting tray or wide shallow ovenproof dish. Lay the potato slices over the top.
Season well and sprinkle with the herbs as you go. Drizzle 4tbsp olive oil and the lemon juice along with a little water over the vegetables so that they are covered to about halfway in the liquid.
Cover the dish with foil and bake in the oven for about 30-40 minutes. Remove the foil and bake for a further 30 minutes.
Season the fish fillets well and brush them with some olive oil. Lay these on top of the potatoes and bake for about another 10 minutes until the fish is cooked through.
Serve with lemon wedges.
