Hot and Spicy Fish Cutlets

Prep Time – 10 minutes
Cooking Time – approx 10 minutes
Calories – 270 per serving
These are too easy for words and are especially good on the BBQ when you want an uncomplicated alternative to meat.
Ingredients
4 white fish cutlets (about 1kg)
For the marinade:
1 tbsp paprika
2 teaspoons ground ginger
1 teaspoon curry powder
60ml brown vinegar
60ml tomato paste
250 ml white wine
2 garlic cloves crushed
Place all the ingredients for the marinade in a bowl and mix together well.
Add the fish cutlets, making sure they are well coated.
Cover and refrigerate, preferably overnight but for at least 3 hours.
To cook the fish, remove from the marinade and grill, barbecue or pan fry on a heated grill plate until just cooked through.
Serve with lemony couscous and rockett or spinach salad.
