Leeks With Ham & Cheese

Serves 4
Prep Time – 15 mins
Cooking Time – 10-15 mins
150-200 Cals Per Serving (depending on thickness of cheese)

These are delicious and full of flavour, perfect served with green salad for lunch or supper or even on their own as a a dinner party starter. Really easy to make too.

Ingredients
12 thin young leeks, trimmed
4 tablelspoons olive oil
12 thin slices Gouda cheese
Approx 20 fresh sage leaves, roughly torn
12 slices Parma ham
Freshly ground black pepper

Cook the leeks in boiling water for 3-4 minutes until just tender and then cool them under cold running water. Pat them dry with kitchen roll and make sure there is no excess water left in the leeks.

Lay a slice of cheese on a slice of the ham and then place a leek at one end. Roll this up tucking in a few sage leaves as you go.
Repeat until all the leeks are rolled.

Brush an oven proof baking dish with the oil and the place the leeks in this making sure they fit quite tightly together. Scatter the remaining sage and olive oil over the top along with some freshly ground pepper and cook for 10-15 minutes in a preheated oven (190C / 375F / gas mark 5).

Serve immediately.
