Mango Mousse

Serves 6
Cooking Time – 15 approx minutes
(allow time for the mousse to set also)
Here’s anther very quick and easy but delicious pud.
Ingredients
- 2 mangoes
- 75g sifted icing sugar
- Juice of two limes
- 2 tsps gelatine, soaked in two tbsp cold water
- 284ml whipped double cream
Cut the mangoes in half lengthways and scrape out the flesh. Place this into a blender or food processor along with the icing sugar and lime juice. Blend until smooth.
Warm the gelatine slightly until fully dissolved and mix this into the mango puree along with the whipped cream.
Pour into individual glass bowls or a medium sized souffle dish and refrigirate until set.
Best served with a few fresh berries alongside or on top.
