Mushroom and Sardine Pâté

Serves 6-8
Prep Time – 5 minutes
Cooking Time – 10 minutes

Please read on! Do not be put off by the sardines. Whenever I serve this to my guests, everyone adores it but no one can ever guess what’s in it! And with sardines being so high in omega fish oils, we should all be eating more of them. This pâté will keep quite happily for three days in the fridge but do not freeze.

Ingredients

  • 84g butter
  • 225g sliced mushrooms
  • 2 x 125g tins of sardines – drained
  • 225g philadelphia cheese
  • 2tbsp lemon juice
  • Freshly ground salt and pepper
  • A few chilli flakes

    Melt the butter in a frying pan and saute the mushrooms.

    Allow to cool then place in a food processor with the remainder of the ingredients. Season well and whizz until completely smooth.

    Serve with lemon wedges and toasted soda bread.
