Prawn and Garlic Pasta

Luxurious, delicious and very quick to prepare.

Ingredients

350g fresh spaghetti
125g butter
2 cloves of garlic crushed
225g cooked and peeled prawns
225g rocket
Chopped parsley
Salt and freshly ground black pepper

Melt the butter together with the garlic in a large saucepan and cook gently for a couple of minutes.

Add the prawns and stir until they are well coated with the butter and heat through which should only take a minute or two.

In the meantime you will have cooked the spaghetti according to the instructions on the packet. Drain the spaghetti and add it to the prawn and butter mixture.

Stir in the rocket and plenty of seasoning.

Serve as soon as the rocket begins to wilt, not forgetting to sprinkle a little parsley over the dish.
