Sausages with Prunes and Bacon

Serves 4-6
Prep Time – almost no time
Cooking Time – about 25 minutes
Calories – depends how indulgent your sausages are and how streaky your bacon is!
With the barbecue season fast approaching, here is something to liven up the bog standard British banger.
Ingredients
12 good quality pork based thick sausages
250g pitted prunes
12 rashers streaky bacon
Prick the sausages a couple of times with a fork and then place in a saucepan. Cover in hot water, bring to the boil and simmer uncovered for ten minutes.
Drain the sausages and allow to cool. Cut a long slit down the side of each sausage and place 3 prunes inside. Wrap each sausage in a rasher of bacon and secure with a toothpick.
Barbecue until the bacon is nice and crispy.
And try this...Salad Soup
Ever wondered what to do with a lovely bowl of dressed but uneaten salad?
Whizz all the salad up in a food processor and add the same again in tomato juice. Add chopped garlic to taste.
Chill and serve with chopped cucumber and croutons – gazpacho style.
