The most magic of mushrooms...
Published on Thursday 14th September 2006

I just love mushrooms. Be it in a salad, a risotto, a Thai or a curry - on a restaurant menu I'm always drawn to them. But cooking with bog standard mushrooms from the supermarket never seems to have the same effect (probably also due to the fact that I'm not the greatest of cooks!), so I was really excited when I discovered a new website that specialises in selling wild foods, foods previously only enjoyed by top chefs, online.

WildFoods are in the know when it comes to mushrooms. You can buy them fresh and wild, fresh and cultivated, dried or frozen, or if you cant make up your mind try one of their Mushroom Mixes. Prices start from £4.99 for a basic mix.

Here are some of my WildFoods.com favourites:

Oyster Mushrooms. They taste quite sweet and go well with most meat and fish, and they're harvested throughout the year.

Porcini / Ceps Mushrooms. Loved by chefs and called Porcini in Italy, and Ceps in Scotland, these mushrooms are nutty, slightly meaty, have a smooth creamy flavour and are absolutely delicious.

108

Shitake Mushrooms. Grown commercially in the Far East on lags, Shitake have a robust beefy sweetness and go a brown, black colour when cooked, making them great in casseroles and risottos.

I'd recommend a bit of their Truffoil Light (£9.99) to go with your Shitake Risotto - just a touch however, there's nothing worse than truffle overload!

As well as selling foods that are wild literally (mushroom, herbs and truffles), WildFoods.com also sells foods that are wild figuratively (avocado oil and Sevruga caviar), ie they're selected due to their wild gourmet flavours. There are over 450 unique ingredients to chose from.
