Tuna Tartare

Prep Time – 15 minutes
Refrigerate for 30mins
Calories – 150 per serving
This makes a delicious and light starter for summer dinner parties.
Ingredients
200g very fresh tuna
1 tbsp capers, drained, rinsed and finely chopped
2 tsp horseradish
80ml lime juice
2 small tomatoes, seeded and chopped
1 small red onion, finely chopped
1 avocado, chopped into small pieces
1 baby cos lettuce
1 tbsp extra virgin olive oil
Cut the tuna into small cubes and place in a bowl with the capers, horseradish and one tbsp of the lime juice. Cover and refrigerate for 30 mins.
Mix the tomatoes, avocado, onion and the rest of the lime juice.
Distribute the lettuce leaves between 6 small plates, top with the tomato mixture followed by the tuna mixture.
Drizzle with the extra virgin olive oil and a grind of black pepper to serve.
