Warm Chicken and Mint Salad

Prep Time - 10 minutes
Cooking Time - 5 minutes
Calories - 150 per serving

This warm dish is also delicious served cold making it perfect for a picnic.

Ingredients

400g skinless chicken breasts
1 medium red onion
Half a green pepper
1 small red chilli, deseeded
1 bunch fresh mint
1 tbsp soy sauce
1 tbsp fish sauce
1.5 tbsp lemon juice
1 clove garlic, crushed
1 tsp grated fresh ginger
1.5 tsp sugar

1. Cut the chicken into bitesize pieces. Heat a non-stick frying pan and cook the chicken over a high heat until it turns white. Remove from the heat and keep warm.

2. Peel and thinly slice the onion. Slice the green pepper to a similar size. Chop the chilli.

3. Remove the mint leaves from the stems, breaking the larger ones in half. Mix all the ingredients from steps 1., 2. and 3. together.

4. Whisk the soy sauce, fish sauce, lemon juice, garlic, ginger and sugar together, pour over the salad, toss lightly and serve garnished with a couple more mint leaves.
