Time to indulge...

Today is Shrove Tuesday a.k.a Pancake day. It’s the last day before Lent and the last chance to indulge yourself before giving things up until Easter. Last year I gave up chocolate and ate an entire box of Lindt Lindor with my pancakes…..haven’t decided if I can bear to give it up again though…
So indulge tonight. You don’t need to be Delia to make great pancakes, just follow this simple recipe and brush up on your tossing skills:
110g/4oz plain flour, sifted
pinch of salt
2 eggs
½ pint of milk, or milk mixed with water
1 tablespoon of oil
To serve:
caster sugar
lemon juice
blueberry jam
chocolate
icecream……
Sift flour and salt into a bowl and make a well in the centre.
Break eggs and a bit of the milk or milk/ water into it.
With a wooden spoon or a whisk begin drawing in flour from the sides.
Gradually add the milk/water.
When it’s all mixed in, beat it well and stir in the oil.
Add a bit of butter or oil to a really hot pan and pour about 1 tablespoon of batter in - depending on size of your pan and how think / thick you like them.
Toss when brown.
Scrape off kitchen floor and cook on other side.
Serve with just about anything naughty...!
NB. Your first is likely to be a disaster. Persevere.
